January 29th

·        Final filtering of Pinot Gris from Roxanne’s, Vista Grande, and 3 Vineyards

January 27th

o   Continue sorting and storing bottles (will pick up new hocks on Tuesday)

o   Check and top reds

January 26th

·        SO2 tests on all Pinot Gris and Hillside chardonnay

·        Add Vinepur for clarification

·        Filter Pinot Gris (Roxanne’s and Stradley)

·        Lots of problems with both filter systems (plate and cartridge) – maybe because of more solids in the Vinepur

·        Tasted all four Pinot Gris choices:

o   Fuqua

o   Roxanne’s

o   Stradley (pickings 2, 3 and 4)

o   Stradley Reserve (first picking – dropped fruit)

·        Concluded that we would bottle each separately (may have some blended as 3 Vineyards)

·        Crew: Dave, Gary, Larry, Norm and Ed

·        Thanks to Joy-Gay for soup, Roxanne for salad and Ila for dessert. We needed increase in blood sugar after frustrating day

January 18th

·        Racked all of the Pinot Gris:

o   Fuqua

o   Roxanne’s

o   Vista Grande 1 (where we dropped fruit)

o   Vista Grande 2

o   Vista Grande 3 and 4 (end of season swap of wine for grapes)

·        Crew: Larry, Norm and Ed

January 15th

·        Gary delivered 18 cases of assorted bottles without labels – a big help

·        I continue to adjust the SO2 levels in all the reds while topping

January 14th

·        Prune vineyard (crew of four) and pull brush

·        Very cold – slippery hill

January 8th

·        Very cold weather forecast – maybe snow

·        Continue to winterize

January 6th

·        Hooray! Finally finished all of the racking. At one point all of the small glass (up to 3 gallons) was in use.

·        Thanks again to Dave Francisco for the extra 5-gallon carboys. They were challenging to clean, but essential.

·        Completed the addition of ML to absolutely everything (oak, steel and glass).

·        Left lots of steel that still needs to be cleaned. Need to empty unused glass outside before freeze hits next week.

·        Seattle stumbles to victory over the Cowboys. Ho Hum.

January 4th and 5th

·        Gary took samples from most of the reds and conducted tests for ML.

o   Sam’s Syrah finished

o   Everything else still working (from little to 80% through)

o   Curious that barrels were inoculated at same time and held in same conditions but still vary in results

·        Organized inventory in bottle room to accommodate barrels

·        Adjust SO2 levels – particularly for barrels finished with ML

December 31 and January 1

·        Rack Hillside, Del Rio and Canoe Ridge Cabernets (26 gallons) into new Barrel Associates oak. Fill (4 gallons) with Del Rio Merlot (and free up small Damy barrel).

·        Rack Zinfandel, Sam’s Cab, and Pommard from partial containers. Add 30 ppm of SO2 and hope for no damage.

·        Clean and organize.
