CILIEGE AL VINO BAROLO (Cherries in Wine) Fantastic over anything chocolate 1/2 cup sugar 4 cups port, or red wine 1 10-ounce jar red currant jelly 1 strip, 4", orange peel 1 cinnamon stick, 2" x 1/4" 2 1/2 pounds pitted Bing cherries, Combine sugar, wine, currant, jelly, orange peel and cinnamon stick in heavy saucepan. Bring to a boil; stir to dissolve sugar and jelly. Reduce heat; simmer until mixture is well blended and syrupy, about 15 minutes. Add cherries; heat about 2 minutes. Chill. Remove cinnamon and orange peel. Serve plain or with custard, ice cream and top with whipped cream or mascarpone. I often use sweetened macarpone cheese in place of whipped cream . The tartness of the mascarpone suits the wine Makes 8 servings |
